in the kitchen: sweet potato fries

i really don't think that a recipe can get easier than this one.  and oh, the rewards are glorious.  behold, the homemade sweet potato fry.

sweet potato fries
  • 1 large sweet potato
  • 1 T oil
directions

1.  preheat oven to 350 degrees F.  line a baking sheet with aluminum foil.

2.  wash and peel sweet potato, then cut into equal-sized fries.  put the fries into a resealable bag and pour in the oil.  squish things around until the fries are evenly coated with oil.

3.  dump the fries onto the baking sheet and arrange them into a single layer. bake at 350 degrees for about fifteen minutes.

4.  remove the fries from the oven.  turn the oven up to 425 degrees F.  turn the fries over, then return them to the oven.  bake for about ten minutes.  (keep an eye on them, because every oven is different.  i like mine dark on the edges.)  let the fries cool on the sheet for about five minutes before devouring.

you can add spices or salt before you bake them if you want, but in my opinion these little beauties are just perfect as-is.  if you want a little kick to them, then i suggest...

barbecue fry sauce
  • 1T mayonnaise
  • 1 1/2 t bbq sauce
directions

mix.  adjust to suit your tastes.  devour with sweet potato fries.
